Soy Beans, 
soy beans are harvested when mature and unlike other beans soy beans offer a complete protein. Soy beans ideally need to be cooked in a pressure cooker and can take about 45 minutes, but once prepared they can be added to virtually anything.

Edameme are whole green soy beans, harvested young while the beans are still soft. Which makes for easy additions to any meal without cooking.

Quorn 
Im going to skip Quorn.  Upon initial searching it seems it is a fungus based vegetarian meat alternative from the UK that is made into products only available outside of Canada. Many mixed reviews on this product. 

Rice and Beans
Rice and beans are a combination of widely available staple foods that are on many household tables around the world.  Combining the grain and the legume provides several important nutrients along with creating a complete protein.

Ezekiel Bread
This Bread is a Sprouted bread. Sprouted Bread is a type of bread made from whole grains that have been allowed to sprout/germinate and then milled into flour.  Because of the sprouting process this bread is much higher in nutritional content then whole wheat bread.

The key to being vegetarian is to ensure you are creating complete proteins so that you receive the nine essential amino acids that your body needs to function, but can't produce on its own.
Easy Rule: Cook and Eat Legumes with Grains.

Here are some facts: 

Quinoa: 
Is an annual plant grown as a grain crop for its edible seeds.  It is very versatile for many dishes and cooked quinoa supplies nutrient content similar to wheat and rice, quinoa is also gluten free.

Buckwheat:
Despite the name, buckwheat is not related to wheat, as it is not from the grass family.  Instead is related to sorrel, knotweed, and rhubarb.  It is a great source of complex carbohydrates.

Hemp Seed: 
Some consider a superfood.  Hemp seeds contain all the essential amino acids you require, which are normally found in animal protiens.   Hemp seeds are also easily digestible.  Hemp seeds contain both soluble and insoluble fibres, which is difficult to find both fibres from one source.

Chia Seeds: 
They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Omega-3 fatty acids help raise HDL cholesterol, the "good" cholesterol that protects against heart attack and stroke.Mixed with water, they can replace egg in vegan cooking.  Chia seeds can be eaten raw or cooked, but they should be added to another food or soaked before eating.

Resolutions with Mellotones

I recently attended a Mellotones show Dec 23, 2017 and I realized my resolution for 2018.
 
They played the Marquee Ballroom to celebrate their 20th Anniversary.
Since 1997,  this 8 man R&B Funk band blows away their covers and original songs all around the Maritimes.
Catch them regularly at their local gigs such as Bearly’s on Barrington Street and The Shore Club in Hubbards. This is a loud, hands up, feet stomping, drink to the bottom of the barrel, funky, soulful group of guys, killing it at every show. 
​Everytime. Period. 
 
This presents my resolution: Starting This Blog. 
I’ve been cooking since before 1997, Certified Chef since 2000, Catering more then 10 years and a Father for more then 8 years.  I'm not sure where my timeline of 20 years begins, but I’m not about to waste the next 20 years. Too much time passes with each year.
 
I’m hoping to use this blog to become more outside of my box;
Live, Learn and Explore.
Follow me as I discover and profile Local Food Places, Local Farmers  and Producers, with minor Mellotones of Local Arts, Music and Festivals.

At the same time; providing resources and learning tools for my followers to aspire to become Creative Gourmets themselves.

The Mellotones will be starting their 2018 year in style; playing a New Years Gig in the Cayman Islands.
I can only aspire to bring as much energy and excitement into 2018 this year.
